Orpagu dazzles at Conxemar with its swordfish 'ronqueo' (slicing), a show of precision and tradition promoted by Interfish

- The first surface longline organisation in Europe surprises again with one of the most eagerly awaited shows at the Vigo fair, which took place at the stand of the interprofessional fishing organisation.

A Guarda - The Guardeses Longliners Organisation (Orpagu), European leader in surface longline, returned to Conxemar, the most important seafood fair in Europe, to present its range of products and offer a live exhibition of swordfish slicing, a traditional technique that already captivated thousands of visitors to the Vigo fair last year.
The ronqueo, so called because of the characteristic sound produced when sliding the knife along the spine of the fish, is an ancient technique that involves the meticulous cutting up of large species, such as swordfish or tuna. During the exhibition, the professionals from Matrice Tuna, Roberto and Juan Francisco Pérez, showed the details of each phase of the process: from the initial cut to the separation of the different parts of the swordfish, including the loins, the belly and other sections, all of them valued for their flavour and versatility in the kitchen.
The ronqueo is not only a visual spectacle, but also a demonstration of the deep knowledge and respect for the sea that Galician fishermen have inherited from generation to generation. Orpagu, with its extensive experience in the handling of these species, has perfected this process, guaranteeing a comprehensive use of the fish and minimising waste, which also reinforces its commitment to sustainability. As its managing director Juana Parada pointed out in her speech.

In addition to its participation in the fair, Orpagu continues to lead R&D&I projects focused on the sustainability of fishing and the improvement of freezing processes, guaranteeing high-quality products that respect the highest environmental standards. These projects position the organisation at the forefront of the sector, not only in terms of responsible fishing, but also in the incorporation of new technologies that make the activity more efficient and respectful of the marine environment.
The mayor of Vigo, Abel Caballero; the regional minister for the Sea, Alfonso Villares; The leader of the Galician socialists, José Ramón Gómez Besteiro, and the deputy Elena Espinosa, among other authorities, followed with great interest the dissection, which took place at the Interfish stand, and which was highly applauded by the local, national and international media that gathered at the stand.
