Rapid Urbanization and Shifting Social Dynamics Fuel a $1.06 Billion Surge in Norwegian Exports

SHANGHAI — The Norwegian Seafood Council (NSC) has released its definitive Seafood Trends 2026: The China Report, revealing a seismic shift in global trade as the Chinese market evolves into a powerhouse of high-value consumption. Driven by a burgeoning middle class and a cultural obsession with food safety, China has officially become the fastest-growing destination for Norwegian maritime exports.

A Record-Breaking Year for Trade

In 2025, China stunned market analysts by recording the highest value growth for Norwegian seafood globally. Export values surged by $250 million (a 31% increase) compared to the previous year.

<-- NSC has taken all this and mixed it into its approach to consumer marketing in China, through a ‘clean, calm’ look that is often at odds with busier local marketing approaches.

Total seafood purchases by China reached a staggering $1.06 billion, catapulting the nation from the sixth largest market in 2024 to the third largest in 2025. This rapid ascent highlights a deep-seated change in how the 1.4 billion people—concentrated heavily in the urban hubs of the Southeast—view imported protein.

The "Sashimi Standard" and Consumer Trust

While China boasts eight distinct regional "great cuisines" defined by centuries of tradition, the modern consumer is increasingly open to international flavors. However, for the lucrative salmon market, the preference is remarkably specific.

Sigmund Bjørgo, NSC Country Director in China, notes that the "openness" of the Chinese consumer has scaled alongside their spending power. Regarding the salmon boom, Bjørgo explained:

“In fact, this is very much part of the Chinese philosophy of always being on the path of learning. This openness has only increased over recent decades as Chinese spending power has grown. So far, salmon isn’t widely relevant to local tastes. In China salmon equals sashimi – full stop. And sashimi is by definition a foreign food. It is Japanese food and most people eat it for the first time in a Japanese restaurant. There isn’t even much focus on sushi – that is a small slice of the salmon category. It really is mainly sashimi.”

This reliance on the cold chain for fresh sashimi has turned Norwegian salmon into a symbol of trust for the middle class, who prioritize health and convenience above all else.

Modern Drivers: Single Households and Aging Demographics

The report, which features insights from Rabobank analyst Novel Sharma and Undercurrent News journalist Louis Harkell, identifies four "megatrends" currently disrupting the market:

  • A growing middle class juxtaposed with declining birth rates.

  • The rapid rise of single-person households.

  • Complexity in global supply chains and geopolitics.

  • An intensified focus on health-conscious, convenient meal solutions.

“These global megatrends create movement in the Chinese seafood market and play an important role in consumer purchasing decisions. These trends influence consumers’ trust, preference and overall behaviour,” says Bjørgo.

Seven Days in the Life of the Chinese Shopper

Moving away from traditional data sets, the NSC conducted a granular study of 24 shoppers across the "Tier-One" cities of Shanghai, Beijing, Guanzhou, and Shenzhen. Researchers tracked every purchase made by these individuals over a seven-day period in October 2025.

Lars Moksness, NSC Consumer Analyst, emphasized the importance of this boots-on-the-ground approach:

“We wanted to dive deeper into the specifics of consumer behaviour and get detailed insights and answers from the people who participated. Through this new research, we’ve gained powerful new understanding of what influences the Chinese consumer.”

As the 2026 fiscal year progresses, the data suggests that China’s appetite shows no signs of slowing, cementing its status as the most dynamic seafood market on the planet.
