Pioneers of Sustainable California Caviar

While the sturgeon has been around for 200 million years, it wasn’t until the past decade that the market for caviar began to get interesting.

In September of 2007, California Caviar Company (CCC) launched the first sustainable caviar company in the world and the industry has not been the same since.

From its inception, California Caviar has been true to its core mission: sustainability, innovation and education. Linking old world traditions with the new world of sustainable aquaculture and culinary innovation, CCC has become a global leader in the production of sustainably farmed, premium caviar, sought after by Michelin Star chefs, discriminating connoisseurs, and those just discovering the joy of caviar.

Every jar of caviar has a tracking number that allows to trace every egg back to the farm, fish and harvest date.

“The genesis of California Caviar Company was a direct response to consumer demand for a safe, reliable purveyor of high-quality caviar. Our mission is to provide a premium sustainable product that is controlled and guaranteed so our clients can trust and trace every egg from tank to tin,”  says Deborah Keane, CCC founder and CEO.

A pioneer of the sustainable caviar movement, Keane founded California Caviar Company to address the lack of reliable supply in the marketplace. CCC was born out of necessity due to the domestic caviar crisis in early 2000s, an error that was marked by the depletion of wild stocks and an increase in illegally sourced product.

Deborah Keane—the “Caviar Queen”—a renowned tastemaker and caviar master has built a complete, vertically integrated spawning-to-serving enterprise.

In 2007, CCC launch the first caviar company to only sell sustainably farmed caviar years before the worldwide ban on wild sturgeon in 2011. The CCC initials and linked logo not only represent the company's name but also stand for Company Connecting Change, linking the old world traditions and mystique with the new world of innovation and sustainable aquaculture.

CCC owns the U.S. master patent for the Köhler Process, allowing to use first ever techniques for caviar extraction without harming the sturgeon, pioneered by Prof. Dr. Angela Köhler. CCC sustainable mission is moving forward by producing the first-ever only living caviar (also known as “no-kill” caviar) to the United States in 2021. Once approved by the FDA, CCC will be able to massage the fish to extract the precious eggs and will continue to set the national standards for sustainable caviar.

CCC’s dedication to provide caviar lovers with the finest responsibly produced product has led the Caviar Queen to adventures around the globe — and back home to California, where she is committed to sharing her expertise and inexhaustible caviar knowledge with her customers.

What sets CCC apart in the caviar industry is that its farm is completely sustainable in its nature and operation. The infinity loop model, takes natural water sources from the company's own aquifers on property to supply the tanks and ponds. After it filters through the farm, the nutrient rich water goes to CCC's neighbors to irrigate their fields for their cattle, later seeping back into the ground to replenish the mineral rich aquifers. CCC's  model has been touted by US Fish and wildlife department and used as an example for sustainable/ optimal farming partnerships.

With the proliferation of caviar farms throughout the world, Deborah has traveled the globe selecting and making caviar with the highest caliber caviar farms throughout North America, Asia, Europe and the Middle East. Aware that farming conditions are critical to the ultimate quality of caviar, she is meticulous about the condition of water, feed and the overall environment in which the fish are raised. She is well known for climbing in the tanks to personally taste each and every egg before harvest. Her relentless energy and insistence on quality has made her one of the most respected and well-known leaders in the caviar industry.
